The manual says that it can be done, but doesn't say how.

It is done via provisioning, as I recall. Provisioning a Polycom requires a bunch of files on a FTP or TFTP server.

Once you figure out how to provision the files via TFTP/FTP (another topic in itself), you add ringtones via the saf.* configuration settings.
