Asterisk, on any platform, is very resource intensive and will suffer voice quality impairment in IVR, voice mail, transcoding, etc., if you try to do other things on the same machine.
Asterisk@Home only "takes over" the entire computer because it wipes out the hard drive in order to be able to streamline the installation process. Once installed, though, there is nothing besides the caveat I mentioned above to prevent you from installing other applications and utilities on that machine.
