Is there anyone who give me a suggestion? Where can I have learn about SIP, H.323 and IAX? Web, book or forum?

SIP: Session Initiation Protocol
Request For Change (RFC) 3261 describes SIP.

H.323:
The H.323 ITU standard describes "Visual telephone systems
and equipment" for audio/video conferencing over LAN
and the Internet.

you might want to look it up on voip-info which will give you a lamens terms idea of the protocols
